100 Mile Dinner: May 2014
May is a big change for a 100 mile dieter. The new season's produce is starting to appear, but staples like squash and potatoes become sparse. We make good use of rhubarb and local flour in this month's effort.

Ground pork, blueberries, bacon (grease): Gelderman Farms (Abbotsford)
Macro Kelp (Bamfield)
Rhubarb & Chives (garden)
Stinging Nettles (Sechelt)

Mushrooms (Richmond)
Goat's milk (Goat's pride: Abbotsford)
Eggs (Goldwing Farm: Aldergrove)
Asparagus (Abbotsford)
Cucumbers, tomatoes (Taves Family Farms, Abbotsford)
Sifted Wheat Flour (True Grain Mill's Cowichan Red, Duncan)
Honey: (Hardie Honey, Duncan)
Dinner preparation:
Polish Rhubarb Honey Drink - Napoj z Rabarbaru Rzewienia z Miodem:

Dessert: Rhubarb-honey frozen-goatsmilk.
Collect a pound of rhubarb stalks. Chop and mix with a cup of water. Boil for 15 minutes; adding 1/2 cup of honey in the last 5 minutes. Mix with 1.5 cups whole goat's milk, and churn in the ice cream maker for a half hour or until thick. Garnish with blueberries.

Dumplings:
Wraps: mix an egg with 1 cup of flour. Knead until dough has a consistent composition. Let it rest under a damp paper towel for 20 minutes. Flatten with a pasta maker into 3"x3" squares.
Filling: mix ground pork with chives, boiled nettles, mushrooms and 2 slices of kelp (all chopped) and an egg. Put some of the mix on each wrap square, wet the edges and fold closed. Steam for 20 minutes.
Salad: Stir fry asparagus, mushrooms in bacon grease, and add together with raw tomatoes and cucumbers for salad.
Comments. This all worked out yummy. The Polish rhubarb drink is a lot like lemonade. The flour is a bit coarser than all purpose, but it works like any other and has a nice flavour and colour and holds the meat flavours in well. Goats milk is a nice change in the ice cream recipe. The Goat's Pride Dairy has a nice Facebook page with plenty of baby goats.
